As you may have noticed, I get a lot of inspiration from restaurants. I miss a lot of things from places I’ve lived or visited and I love being able to make my own versions of those things at home.
Even though I lived in Scotland for a year, I didn’t try Gregg’s until a couple of months before I left. There was one about a ten-minute walk from my house and I absolutely lived on their donuts and sandwiches during my dissertation. One of my favorite sandwiches is their tandoori baguette, which is the inspiration for this recipe. I’m not a big fan of curry chicken salad, but I LOVED this version. When I found a half-used packet of tandoori spice in the back of my cabinet, I knew this is what I had to make.

As I’ve discussed here, I love chicken salad. These flavorful, aromatic tandoori chicken baguettes are a fun twist that will literally spice up any picnic or packed lunch. Chicken, mayonnaise, tandoori spice, lime juice, cilantro, lettuce and a pinch of salt on a lightly buttered baguette. The lime juice gives it a little bit of acidity and punch and the cilantro is, as always, perfect.
Tandoori baguettes keep SO well, which is partly why they’re so good. The flavor gets better after they’ve sat in the fridge, and the sturdiness of the bread prevents any sogginess. They’re a great meal prep option for lunches, and take no real cooking and very little time. Flavor AND practicality? It doesn’t get better than that!

It seems silly to go over a recipe that has so few steps, so just a few notes:
- You can use premade spice mix or make your own, depending on your time and level of effort you want to put in.
- Be sure to use actual baguettes rather than French bread. Baguettes are skinnier and have a slightly different texture. If you use French bread, you might not have enough chicken.
- I recommend iceberg lettuce for the shredded lettuce because it provides crunch and texture, but you can use whatever you prefer!

Tandoori spice refers to the Indian spice blend that goes on tandoori chicken. It’s easy to find a recipe online if you’d rather make it yourself, or you can buy premade mix. It can be hard to find a pre-blended one, though, especially if you’re not in a city.

- Add chicken, mayonnaise, tandoori spice, salt, lime, and cilantro to a medium mixing bowl. Stir together until thoroughly combined. Butter each half of each baguette. Layer chicken salad and lettuce on the baguette. If you can, chill for at least 30 minutes before serving.
