tandoori chicken baguettes

These flavorful, aromatic sandwiches are a funtwist on chicken salad. They're perfect for picnics or packed lunches!

Ingredients
  

  • 1 ½ cups rotisserie chicken shredded
  • 1/3 cup mayonnaise
  • 2 tbsp tandoori spice
  • a pinch of salt
  • a good squeeze of lime juice
  • 2 tbsp cilantro roughly chopped
  • 2 baguettes
  • butter
  • shredded lettuce

Method
 

  1. Add chicken, mayonnaise, tandoori spice, salt, lime, and cilantro to a medium mixing bowl. Stir together until thoroughly combined. Butter each half of each baguette. Layer chicken salad and lettuce on the baguette. If you can, chill for at least 30 minutes before serving.

Notes

Tandoori baguettes keep for 3 days, tightly wrapped and refrigerated.
