As some of us are starting to go back to the office after a long stint of working from home, it’s easy to dread boring lunches, and even easier to skip packing one altogether and spend a ton of money on buying it instead. If you’re trying to avoid that and also get some extra fruit and protein into your diet, I’ve got you covered.
I eat a lot of salads because they’re so fast, but I’ve been stuck in a lettuce/tomato/cucumber/ranch routine. So when I saw these absolutely beautiful, vibrant red strawberries on sale, I was inspired to switch it up a little.
This salad is so bright and colorful and makes a cute little lunch. We’ve been living in sweatpants for the last two years—it’s hard to feel put together after that! I promise if you pack this salad in a cute little pyrex or bento box, you’ll feel a little more like you have your life together. Extra points if you wear a cute outfit to work!
why i love this recipe
A lot of the salad recipes online are more high-effort than I want. Sure, I’ve posted some involved recipes and I definitely will again. But let’s be honest: when we make salad for lunch or dinner, part of the appeal is that you can just toss it all together and call it a day. This strawberry, chicken & avocado salad celebrates that. There’s no cooking your own chicken, no making your own dressing, no chopping your own lettuce blend.
Honestly, I wasn’t even sure I could post a recipe where you don’t really make anything. I texted Abby in a panic and she said, “That’s exactly the kind of recipe I want.”
So this one is for people who love to eat but don’t love to cook.
This salad is full of produce and protein. It’s delicious. It’s bright and fruity and warm-weather-ish. The strawberries are fresh and pretty, the lettuce crisp. The feta provides a pop of salty sharpness. The avocado is beautiful and creamy and, as always, fits in with both sweet and savory flavors. The chicken adds some heft, and the pecans add some crunch and extra protein as well as some warmth and, well, nuttiness.

The instructions are so straightforward it’s a little silly to have a details section at all. Slice up your strawberries and avocado and cut your lemon into wedges. Dump all of your lettuce into a big bowl (make sure you choose a bowl big enough for both the lettuce, the toppings, and stirring them.) Add the chicken, strawberries, pecans, feta, and avocado slices.
You can arrange this all on the top if you want it to be pretty, or you can just throw it all in. Then toss with salt and the lemon juice and toss with salad dressing. I recommend starting with a little bit of dressing and going from there—the lemon juice acts as dressing, too, and nobody wants a soggy salad.

What kind of dressing should I use? You can use pretty much any fruit vinaigrette you want. I used raspberry, but I can see this being great with pomegranate, or even with balsamic vinaigrette if you don’t want to go the fruit route!
What kind of lettuce should I use? Again, this is up to you! I tend to go for romaine or spring mixes for most salads.
